The Phenomenon of Peruvian Cuisine
Veronica has written previously about the explosion of Peruvian food on the international scene. Just as I read about the news of yet another Peruvian restaurant opening in San Francisco, I was sent this clip of 'No Reservations' in Peru. The show (see video below) is hosted by Anthony Bourdain, famous chef of Brasserie des Halles in New York. In this episode he uncovers one of my favorite Peruvian specialties - ceviche. His guide in Peru is none other than Gastón Acurio, the renowned Peruvian chef (see our earlier post about him).
For those who are interested, Alejandro, over at Peru Food, has posted an English translation of Gastón Acurio's inspirational speech at the University of the Pacific. In it he discusses not only his personal philosophy, but also his beliefs that Peruvian cuisine can be a catalyst for fundamental change in Peru.
