A Taste of Peru in San Francisco

After suffering through a parasite that nearly crippled me in Southeast-Asia, and leaves me with reminiscent stomach aches 10 years later, my husband often shakes his head at my willingness to dive into any local specialty without hesitation. Over the years I have expanded my culinary repertoire with Mediterranean seafood dishes, Thai curries and Guatemalan pepians. But the one dish that has truly captured my heart is the Peruvian Ceviche.

For those who've never tried Ceviche it may sound a bit odd. Although it is technically a raw seafood salad, the seafood is actually cooked by the Ceviche's citrus base which 'pickles' the seafood until it's cooked (without heat). Ceviches come in all shapes, flavours and sizes with a variety of ingredients to distinguish them.

Although Lima has had some world-class restaurants for a while, today Peruvian food is exploding on the international scene as well. A recent article in the San Francisco Chronicle describes this phenomenon and lists a few of the local Peruvian choices. My personal favorite is Fresca, not only because it is right down the street (I would travel across the city to visit their two other locations if necessary), but because they offer an incredible selection of Ceviches as well as some tasty classics such as Lomo Saltado. If you're having trouble picking just one Ceviche to start with, try the Ceviche Sampler - a platter with a variety of different ceviches!
